Blueberry Oatmeal Muffins (12doz)
12 c. flour
½ c. Baking Powder
1 Tblsp. salt
2 Tblsp. cinnamon
12 eggs
3 c. oil
12 c. frozen blueberries
9 c. rolled oats
6 c. brown sugar
12 c. milk
Stir dry ingredients together.
Beat eggs, milk & oil
Add dry ingredients to just moist
Add blueberries at time of baking
Bake 375 for 20-25 minutes
Banana Choc. Chip Muffins (6doz)
12 large bananas (mashed)
3 c. sugar
1 1/3 c. oil
4 eggs
6 c. flour
4 tsp. baking powder
4 tsp. baking soda
½ tsp. salt
3 c. chocolate chips
Crumb Muffins
4 c. flour
2 c. sugar
1 ½ c. margarine (softened)
2 c. sour milk
2 eggs
2 tsp. baking soda
2 c. blueberries or diced apple or chocolate chips
Blend flour, sugar and margarine until crumbly.
Reserve 1 c. crumbs for topping.
To remaining crumbs add milk, eggs, baking soda and fruit.
Fill 2/3 full, top with crumbs.
Bake at 350 for 20-25 minutes
